张掖山药多糖的提取及多糖抗氧化性能的研究 被引量:6

摘要 目的:为全面了解张掖山药中多糖含量及其抗氧化性能,对甘肃张掖山药和河南焦作怀山药中多糖含量进行测定并对其中多糖抗氧化能力进行了探究。以揭示张掖山药作为保健食品的功效基础,为更好地推广和开发张掖山药及山药类保健食品或药品提供理论依据。方法:采用超声波提取法提取山药多糖,并根据苯酚-硫酸法测定了山药中多的含量。通过对·OH自由基清除能力、ABTS自由基清除能力、DPPH自由基清除能力的测定来评价山药多糖的抗氧化性能。结果:张掖山药多糖的提取率为5.36%、多糖含量为13.92%。在一定浓度范围内山药多糖对ABTS自由基、DPPH自由基和·OH自由基均有一定的清除作用。结论:山药多糖具有一定的抗氧化性能,并且多糖含量越高,抗氧化能力越强。 Objective:In order to comprehensively understand the polysaccharide content and antioxidant properties of Zhangye yam,the polysaccharide content of Zhangye yam from Gansu Province and Jiaozuohuai yam from Henan province were determined and the antioxidant capacity of polysaccharide was investigated.To reveal the efficacy of Zhangye yam as health food,and to provide a theoretical basis for the better promotion and development of Zhangye yam and yam health food or medicine.Methods:Ultrasonic extraction method was used to extract polysaccharide from YAM,and the contents of polysaccharide in yam were determined by phenol-sulfuric acid method.The antioxidant activity of yam polysaccharide was evaluated by measuring·OH radical scavenging ability,ABTS radical scavenging ability and DPPH radical scavenging ability.Results:The extraction rate and content of polysaccharide of yam were 5.36%and 13.92%,respectively.In a certain concentration range,yam polysaccharide had a certain scavenging effect on ABTS radical,DPPH radical and·OH radical.Conclusions:The polysaccharide of Yam has certain antioxidant properties,and the higher the content of polysaccharide,the stronger the antioxidant capacity.
