摘要
膳食纤维是纤维素、半纤维素、果胶、低聚糖类、低聚果糖、低聚半乳糖和抗性淀粉等糖类物质的总称。由于膳食纤维对动物机体生长发育和肠道健康具有重要作用,如何高效提取原料中的膳食纤维、保证不破坏其营养成分是目前膳食纤维制备的重点。文章介绍膳食纤维制备的原理和纤维素酶产生的调控机理,重点综述纤维素酶在制备膳食纤维中的工艺,为膳食纤维在动物生产中的高效应用提供参考。
Dietary fiber is a general term for carbohydrates such as cellulose,hemicellulose,pectin,oligosaccharides,fructooligosaccharides,galactooligosaccharides and resistant starch.As dietary fiber plays an important role in growth and development of animal body and intestinal health,how to extract dietary fiber from raw materials efficiently and ensure that its nutritional components are not destroyed are the focus of dietary fiber preparation.The article introduces the principle of dietary fiber preparation and the regulation mechanism of cellulase production,and mainly reviews the process of cellulase in preparation of dietary fiber,to provide a reference for efficient application of dietary fiber in animal production.
