核桃饼粕、三七花复合发酵饮品制备及功效研究 被引量:3

摘要 为解决云南核桃加工附产物问题,利用现代高效益生菌发酵技术对核桃饼粕进行发酵生产饮品,通过测定不同组合加工生产得核桃饼粕发酵饮品中生物活性物质及抗氧化活力得最优配方及工艺,并以雄性白鼠进行动物试验验证。结果显示:(1)按质量份数配比最佳工艺配方为,核桃饼粕︰三七花︰饮用水︰枸杞︰红枣︰蜂蜜︰乳杆菌发酵剂︰低聚果糖的比例为30~35︰3~4︰200~300︰1~1.5︰1~1.5︰1.5~3︰0.1~0.2︰4~5;(2)动物试验验证结果为所得混合发酵饮品(80 mL/kg)可以改善四氧嘧啶性糖尿病小鼠口服糖耐量,对空腹血糖没有影响;所得发酵饮品具有辅助降低高脂血症大鼠血清总胆固醇的作用。结果表明,高剂量发酵饮品具有降低高脂血症大鼠血清甘油三酯的作用。 To solve the problem of yunnan walnut processing attached product,the use of modern,efficient probiotic fermentation technology for walnut cake fermentation drink production,this study was conducted by measuring different combination process production of walnut cake fermentation drink bioactive substances and antioxidant activity in the optimal formula and process,the formula and process production of walnut cake fermentation drinks was analyzed by animal experiment with the function of regulating lipid significantly.The results showed that:(1)The optimum technological formula was as follows:the proportion of walnut cake,Panax notoginseng flower,drinking water,medlar,Chinese red dates,honey,and lactobacillus starter.Fructooligosaccharide was 30-35︰3-4︰200-300︰1-1.5︰1-1.5︰1.5-3︰0.1-0.2︰4-5;(2)The results of animal experiments showed that the mixed fermented beverage(80 mL/kg)could improve the oral glucose tolerance of alloxan induced diabetes mice and had no effect on fasting blood glucose;The fermented beverage has the effect of assisting to reduce the serum total cholesterol of hyperlipidemia rats.High dose fermented beverage can reduce serum triglycerides in hyperlipidemia rats.
