摘要 肥胖是一种危害人类健康的慢性疾病,可导致多种并发症,近年来在全球呈流行态势,受到广泛关注。肥胖及因其产生的慢性病已成为我国及全球重大公共卫生问题。大豆作为人类健康饮食的重要组成部分,富含多种对肥胖具有改善作用的生物活性物质而备受公众关注。文章综述大豆蛋白、大豆异黄酮、大豆肽和大豆膳食纤维等生物活性物质对预防和控制肥胖的研究进展,旨在为预防和缓解肥胖提供参考。 Obesity received widespread attention as a chronic disease,which could lead to varieties of complications and had showed a global epidemic in recent years.Therefore,the obesity and the derivate chronic diseases had become a major public health problem in China and all around the world.The public pay much attention to soybeans in their healthy daily diet and its bioactive substances which had an improving effect on obesity.This paper reviewed the research progress of bioactive substances,such as soybean protein,soybean isoflavones,soybean peptides,soybean dietary fiber,etc.on the prevention and control of obesity,in order to provide a reference for the prevention and mitigation of obesity.
