摘要
植酸是一种安全无毒的生物保鲜剂,因其对水产品具有较强的抗氧化、护色和抑菌作用,在水产品贮藏保鲜中的应用越来越受重视,已作为防腐剂、抗氧化剂、护色剂和除重金属剂等应用于食品行业。本文介绍了植酸的生物功效,综述了植酸、植酸复合保鲜剂以及结合物理保鲜技术在水产品品质控制中的应用研究进展,指出植酸应用中可能存在的一些问题,旨在进一步促进植酸在水产品贮藏保鲜中的应用研究。
Phytic acid was a kind of safe and non-toxic biological preservative, the application of phytic acid in the storage and preservation of aquatic products had attracted more and more attention, because of its strong antioxidant, color protecting and bacteriostasic effects on aquatic products, and it had been used in the food industry as preservative, antioxidant, color protecting agent and heavy metal removal agent. This paper introduced the biological functions of phytic acid,summarized the application research progress of phytic acid, phytic acid compound preservative and combined physical preservation technology in quality control of aquatic products, and pointed out some possible problems in the application of phytic acid, aiming to further promote the application research of phytic acid in the storage and preservation of aquatic products.
