摘要
高校食堂具有原料种类多、客流量大且集中、烹调方法多样以及工艺流程复杂等特点。为了保证师生的饮食安全卫生,规范食堂的日常管理,高校食堂食品卫生和安全监管问题的研究具有重要现实意义。
College cafeterias are characterized by many kinds of raw materials, large and concentrated customer flow, various cooking methods and complex processes. In order to ensure the dietary safety and hygiene of teachers and students and regulate the daily management of canteens, the study of food hygiene and safety supervision in college canteens is of great practical significance.
