摘要 目的:对青岛市食品安全风险监测结果进行分析,分析食品污染的具体情况,并根据监测结果采取有效的干预对策,以便为食品安全管理提供参考。方法:在2021年7月—2022年7月,从青岛市食品流通与餐饮服务环节中挑选24类样品,根据食品安全国家标准中的程序与方法对样品进行检测,分析食品中存在的安全风险。结果:共抽检24类195份样品,样品理化指标的总合格率为91.67%,微生物指标的总合格率为84.85%。化学污染物中合格率低的样品有蔬菜(重金属);糕点、淀粉、粮食制品(铝);水产加工品(二氧化硫、甲醛);乳制品(蛋白质);蛋类及制品(重金属);米粉(二氧化硫);熟肉制品(甲醛、亚硝酸盐)。检测出有微生物污染物的样品有快餐、直饮水;水产加工品;乳制品;速冻面米制品;糕点、淀粉粮食;熟肉制品等。结论:青岛市食品合格率较低,存在较为普遍的化学与微生物污染,因此相关部门需要进一步对青岛市增强食品安全风险监测,并采取有效的食品安全管理措施,以此为青岛市的食品安全提供充分的保障,使人们的生活质量得到进一步提高。 Objective: To analyze the results of food safety risk monitoring in Qingdao, analyzes the specific situation of food contamination, and according to the monitoring results to take effective intervention countermeasures, in order to provide a reference for food safety management. Method: From July 2021 to July 2022, 24 kinds of samples were selected from the food circulation and catering services in Qingdao, and the samples were tested according to the procedures and methods in the national food safety standards to analyze the safety risks in food. Result: A total of 195 samples of 24 categories were sampled, the total qualified rate of physical and chemical indicators of the samples was 91.67%, and the total qualified rate of microbial indexes was 84.85%. Among the chemical pollutants, the samples with low qualified rate included vegetables(heavy metals);pastry, starch, grain products(aluminium);aquatic products(sulfur dioxide, formaldehyde);dairy products(protein);eggs and products(heavy metals);rice flour(sulfur dioxide);cooked meat products(formaldehyde, nitrite). The samples with microbial contaminants were fast food and direct drinking water;aquatic products processed;dairy products;quick-frozen noodles and rice products;pastry, starch food;cooked meat products, etc. Conclusion: It is found that the qualified rate of food in Qingdao is low, and there are relatively common chemical and microbial pollution. Therefore, relevant departments need to further strengthen the risk monitoring of food safety in Qingdao, and take effective food safety management measures, so as to provide adequate protection for food safety in Qingdao, and further improve the quality of life of people.
