环境压力对益生菌冲剂活性的影响

摘要 为了解益生菌冲剂中的益生菌对环境压力的耐受性,本研究测定了市面上3种不同品牌的益生菌冲剂(A、B、C)所含益生菌在不同胆盐浓度、不同盐酸pH值、不同H_(2)O_(2)浓度下的耐受能力。结果表明,12 h内3个产品在最高胆盐浓度(0.4%)中的活性均表现优秀;在pH <6.5时,随着pH值的升高3个产品的活性均呈现递增趋势;在H_(2)O_(2)浓度低于0.013 3%时,随着H_(2)O_(2)浓度的升高A、B、C产品活性均呈现递减趋势。并在0.01%H_(2)O_(2)浓度下继续培养48h后,发现C产品对H_(2)O_(2)有较强的适应能力,能在该浓度下成功生长繁殖。本研究的结果可为进一步推进相关标准的建立提供依据,也为开发更好的益生菌产品提供参考。 In order to evaluate the tolerance of probiotic granule products against different environmental stresses, viability of three commercial probiotic granule products(designated as A, B and C) exposed to bile salt,HCl and H_(2)O_(2)were measured as salt, acid and oxidative stresses, respectively. Within 12 h, the activities of products A, B and C under the highest bile salt concentration of 0.4% were not affected. At pH < 6.5, the activities of all the three products showed an increasing trend with the increase of pH. When the concentration of H_(2)O_(2)was lower than 0.013 3%, the activities of all the three products decreased with the increase of H_(2)O_(2)concentration. During 48 h of continuous culture at the concentration of 0.01% H_(2)O_(2), product C showed strong adaptability to H_(2)O_(2)and could grow and reproduce successfully at this concentration. The results can provide a valuable reference for future establishment of relevant food standards and development of even better probiotic products.
