摘要 农药在农业生产中主要有防治病虫害、调节植物生长和除草等作用,农药能够有效保障和促进农作物生产,提高农作物的产量。生活中常见的农药种类主要是氨基甲酸酯类、拟除虫菊酯类、有机磷类和有机氯类等,农药量使用不当会导致粮食、蔬果中的农药残留超标,轻则影响消费者食用安全,严重则会影响人们的生命安全。本文分析了果蔬中农药残留检测常用的技术手段,即液相色谱技术、气相色谱技术、色谱-质谱联用技术和酶抑制技术等方法,以期为从事农产品质量安全的工作人员提供参考。 Pesticides in agricultural production mainly have the functions of controlling pests and diseases,regulating plant growth and weeding. Pesticides can effectively guarantee and promote crop production and improve crop output. The common pesticides in daily life are mainly carbamates, pyrethroids, organophosphorus and organochlorine.Improper use of pesticides will lead to excessive pesticide residues in grain, vegetables and fruits, which will affect the consumption safety of consumers, and seriously affect people’s life safety. This paper analyzes the technical techniques commonly used for pesticide residue detection in fruits and vegetables, namely liquid chromatography technology, gas chromatography technology, chromatography-mass spectrometry and enzyme inhibition technology, in order to provide a reference for the staff engaged in the quality and safety of agricultural products.
