二十四节气里的苏式点心创新研发

摘要 苏州美食作为苏州地域文化的重要组成部分,其讲究“不时不食”。春饼、夏糕、秋酥、冬糖等各色糕点美食,不仅具有鲜明的时令特点,还具有食疗养生功效。但面对部分五谷不分、节气不明的新都市人群,“不时不食”的苏式美食也渐行渐远。基于此,本文在分析二十四节气和苏式点心内涵的基础上,探索二十四节气苏式点心的创新实践研究,旨在将苏州的节气饮食思想融入点心中,促进节气民俗资源的重组和饮食传统的再创造,为人们创新研发出更具有吸引力的节气苏式点心美食打下基础。 As an important part of Suzhou regional culture,Suzhou cuisine pays attention to “not eating from time to time”.Spring cakes,summer cakes,autumn cakes,winter sugar and other cakes and delicacies not only have distinctive seasonal characteristics,but also have the effect of dietary therapy.However,in the face of some new urban population where the grains are not divided and the solar terms are unknown,the Suzhou-style dimsum that “does not eat from time to time” is also gradually drifting away.Based on this,on the basis of analyzing the connotation of the twenty-four solar terms and the Suzhou-style dimsum,this paper explores the innovative practice research of the twenty-four solar terms and the Suzhou-style dimsum.Reorganization and re-creation of dietary traditions lay the foundation for people to innovate and develop attractive solar term Suzhou-style dimsum delicacies.
