摘要 食品中农药残留的分析是当今一项重要的任务。为了保障消费者的健康,质量控制必须非常严格。食品质量保证最重要的目标之一是检测食品中的残留物和污染物。在化学危害中,农药污染食品被认为是许多严重疾病的重要来源。液相色谱-质谱法(LC-MS)被广泛认为是检测食品的一种理想的、高度特异性和极其灵敏的技术。以LC-MS方法在粮食农药残留分析中的应用为例,系统阐述了LC-MS方法在食品农药残留分析中的应用。 The analysis of pesticide residues in food is an important task.In order to protect the health of consumers,quality control must be very strict.One of the most important objectives of food quality assurance is to detect residues and pollutants in food.Among chemical hazards,pesticide contaminated food is considered to be an important source of many serious diseases.Liquid chromatography-mass spectrometry(LC-MS)is widely regarded as an ideal,highly specific and sensitive technology for the detection of food.Taking the application of LC-MS method in the analysis of grain pesticide residues as an example,this paper systematically expounds the application of LC-MS method in the analysis of food pesticide residues.
