Maltol derivatives have a long history of use.As a common additive,they are highly valued by various industries.With the continuous improvement of synthesis technology and the widening of application fields,the applicability of maltol derivatives in various industries is getting stronger and stronger.In this paper,the development history,synthesis methods and applications in flavor fields of maltol derivatives were described,and the future development of maltol derivatives was predicted.
