白酒风味密码揭秘程度的研究进展 被引量:3

Research Progress on Demystification Degree of Baijiu Flavor Codes

摘要 白酒是中国的国酒,在食品行业中占据重要地位。长期以来,白酒作为中国传统文化的重要载体,融入人们的工作与生活。白酒因其风味独特,备受国人关注与喜爱。近年来,有关揭秘白酒风味密码的研究逐渐深入,取得了大量成果。研究已证实,白酒中仅有的2%的微量成分是白酒风味品质的密码。基于此,文章针对白酒中微量成分的相关研究进行了梳理,包括提取方法、检测技术、分析和评价方法等,并对今后研究方向进行展望,以期为白酒行业绿色、高效转型升级以及智能化发展提供借鉴。 Baijiu is the national liquor of China and plays an important role in the food industry.For a long time,as an important carrier of Chinese traditional culture,Baijiu has penetrated into people’s work and daily life.As a result of its unique flavor,Baijiu has always been concerned and loved by Chinese people.In recent years,the research on demystifying the flavor code of Baijiu has been gradually deepened,and a lot of achievements have been made.Research has confirmed that only 2%of trace components in Baijiu are the code for the flavor quality of Baijiu.Based on this,the relevant research progress on trace components in Baijiu was systematically summarized in this paper,including extraction methods,detection techniques,analysis and evaluation methods,and prospected the future research direction for the trace components in Baijiu,in order to provide reference for the green transformation and upgrading of Baijiu industry and intelligent development.
