油茶籽油加工过程中蛋白含量的变化研究 被引量:1

摘要 以油茶籽油为原料,采用离子液体-盐离子双水相体系(ABS)对油中的微量蛋白进行提取,并考察离子液体和盐浓度对提取效率的影响,通过单因素实验确定茶油中微量蛋白提取的最佳组合浓度,并利用此方法进行油茶籽油精炼过程中蛋白含量的变化研究、压榨与浸提油中蛋白含量的差异研究。结果表明,采用200 g/L的[Bmin]Cl+500 g/L的K_(2)CO_(3)为最佳的双水相体系萃取油中的微量蛋白,方法变异系数4.39%,加标回收率(80.95±0.05)%,油茶籽油精炼工艺中的过滤、脱胶、碱炼、脱色工序均能显著性降低油中蛋白含量,其中过滤工序影响最大,蛋白含量减少76.03%,压榨与浸提成品油茶籽油中蛋白含量差异极显著,在实际商品鉴定中具有极大的应用潜力。 The trace proteins from Camellia oleifera seed oils were extracted by ionic liquid and salt based aqueous two-phase system(ABS).The effect of ionic liquid and salt concentration on its efficiency of extraction was identified.The single factor experiments were used to determine the optimal ionic liquid and salt concentration for the extraction.Besides,the protein contents in the process of oil refining and the difference in protein contents between the processes of extracting and pressing could be analysed by such method.The results showed that 20%[Bmin]Cl+50%K_(2)CO_(3) could be used as the best aqueous two-phase system for the extraction of trace proteins from oil;In addition,the coefficient of variation was 4.39%and the recovery yield was(80.95±0.05)%.Moreover,the protein content in the oil could be significantly reduced through the oil refining process including filter,degumming,alkali refining,bleaching process.Among them,the filtering process had the greatest effect on it,in which the protein content was reduced by 76.03%.Furthermore,there was a significant difference in protein contents between the extracted and pressed Camellia oleifera seed oils,which served as a great application potential in actual commodity appraisal.
