摘要
为减缓果实在贮藏期的衰老,延缓果实品质下降,探索采后ASM处理对三季梨果实衰老和贮藏品质的影响。采后用0.1 g/L ASM浸泡处理三季梨果实10 min,常温中贮藏,果实呼吸速率和乙烯释放量在贮藏第10 d达到峰值,对照组分别是ASM组的1.24和1.23倍;ASM组的果肉硬度在贮藏第6 d受到抑制最明显,是对照组的1.75倍;ASM组水不溶性果胶含量在贮藏第4~8 d和12 d显著高于对照组,水溶性果胶含量在贮藏第2 d和6~12 d显著低于对照组;ASM组可溶性糖含量在贮藏期第10 d是对照组的1.3倍;可滴定酸含量在贮藏第3,12 d表现最明显,是对照组的1.2倍;抗坏血酸含量在贮藏期第12 d增加最显著,是对照组的2.6倍;ASM组有效抑制L*值的下降和a*,b*值的上升。研究表明外源ASM处理能够保持三季梨果实贮藏品质并延缓其衰老过程,为果蔬采后防腐保鲜技术的开发提供理论依据。
In order to delay senescence and quality decline of fruit during storage,the effects of post-harvest acibenzolar-S-methyl(ASM) treatment on senescence and storage quality of Docteur Jules Guyot pears were explored.Docteur Jules Guyot pears were dipped with 0.1 g/L ASM for 10 min after harvest,and it was found that the respiratory rate and ethylene release of the fruit during room temperature storage reached peak at 10th day.The respiratory rate and ethylene release of the control group were 1.24 times and 1.23 time those of the group treated by 0.1 g/L ASM.The flesh firmness of the group treated by ASM was remarkably suppressed at 6^(th) day of storage,which is 1.75 times that of the control group.The content of water insoluble pectin of the group treated by ASM was significantly higher than the control group at 4~8^(th) day and 12^(th) day,and the content of water soluble pectin was significantly lower than the control group at 2^(nd) day and 6~12^(th) day;Moreover,the content of soluble sugar of the group treated by ASM was 1.3 times that of the control group at 10^(th) day of storage;The titrated acid content in the group treated by ASM showed most obvious at 3^(rd) and 12^(th) day of storage,which was 1.2 times that of the control group,and the ascorbic acid content increased most significantly at 12^(th) day of storage,which was 2.6 times that of the control group.The ASM group effectively suppresses the decline of L^(*) value and the rise of a^(*),b^(*) values.The research shows that exogenous ASM treatment can maintain the storage quality and delay senescence of Docteur Jules Guyot pears,which provides theoretical basis for development of post-harvest preservation technology of fruits and vegetables.
