市售鱼油中37种脂肪酸含量调查

Investigation on the contents of 37 kinds of fatty acids in fish oil in markets

摘要 目的了解市售鱼油中37种脂肪酸,特别是二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)的含量。方法样品在正己烷中溶解后,经2 mol/L氢氧化钾-甲醇甲酯化,硫酸氢钠中和后,气相色谱法测定。结果37种脂肪酸中,检出率高的主要有11种,其中十八碳酸(C18.0)、反-9-十八碳一烯酸(C18.1n9t)、顺,顺-9,12-十八碳二烯酸(C18.2n6c)、顺-11-二十碳一烯酸(C20.1)、顺,顺,顺-8,11,14-二十碳三烯酸(C20.3n6)、顺-5,8,11,14,17-二十碳五烯酸(C20.5n)和顺-4,7,10,13,16,19-二十二碳六烯酸(C22.6n3)的检出率为100.0%。而二十一碳酸(C21.0)、顺-13-二十二碳一烯酸(C22.1n9)、二十三碳酸(C23.0)和顺-15-二十四碳一烯酸(C24.1)的检出率仅为10.0%~20.0%。检出的含量为ND~34.58 g/100 g,大部分样品中EPA和DHA的测定值在其标示值范围内。结论市售鱼油产品中EPA和DHA的含量与标示值基本一致。 Objective To understand the contents of 37 kinds of fatty acids in commercially available fish oils,especially eicosapentaenoic acid(EPA)and docosahexaenoic acid(DHA).Methods After the sample was dissolved inn-hexane,the fatty acids were esterified using 2 mol/L potassium hydroxide-methanol methyl,then neutralized by sodium acid sulfate,and the derivatives were determined by gas chromatography.Results Among the 37 kinds of fatty acids,those with the top 11 detection rates were observed,of which the detection rate of stearic acid(C18.0),9-trans-elaidic acid(C18.1n9t),linoleic acid(C18.2n6c),cis-11-eicosenoic acid(C20.1),cis-8,11,14-eicosatrienoic acid(C20.3n6),cis-5.8.11.14.17-eicosapentaendoic acid(C20.5n)and cis-4,7,10,13,16,19-docosahexaenoic acid(C22.6n3)is 100.0%.And the detection rate of heneicosanoic acid(C21.0),erucic acid(C22.1n9),tricosanoic acid(C23.0)and nervonic acid(C24.1)is between 10.0%and 20.0%.The detected concentration is within ND-34.58 g/100 g.The contents of EPA and DHA in most samples were within the range of their labeled values.Conclusion The detected contents of EPA and DHA in fish oil products are basically consistent with the marked contents.
