4个锥栗品种坚果品质比较

Comparative Analysis on Nut Qualities of Four Castanea henryi Cultivars

为科学评价和鉴定锥栗的品质特性以及加工利用提供理论参考依据,本研究以4个湖南省选育的锥栗品种‘华栗1号’‘华栗2号’‘华栗3号’‘华栗4号’为试材,测定和比较了4个锥栗品种坚果外观品质指标、内在品质指标及坚果中6种营养元素的含量。结果表明:4个锥栗品种坚果品质存在不同水平的差异性。其中,‘华栗1号’单果重(11.68 g)显著高于其他品种,属大果型,可溶性糖(10.08%)、维生素C(325.80μg·g^(-1))、Zn(5.34μg·g^(-1))、Cu(5.57μg·g^(-1))含量也最高,其余营养成分较高;‘华栗2号’单果重8.39 g,属于中等果型,K(0.39%)、Ca(370.67μg·g^(-1))、Zn(5.34μg·g^(-1))含量最高,可溶性糖、蛋白质、Fe含量较高;‘华栗3号’单果重8.85 g,属中等型,坚果光泽油亮,外观漂亮,淀粉(36.97%)、Ca(366.67μg·g^(-1))、Fe(10.03μg·g^(-1))含量最高,可溶性糖、维生素C、Cu含量较高;‘华栗4号’单果重8.29 g,属中等果型,蛋白质、脂肪含量最高,K、Zn、Cu含量较高。

To provide a reference for the scientific evaluation and identification of the quality characteristics of Castanea henryi and processing and utilization,the four cultivars of‘Huali1st’‘Huali 2nd’‘Huali 3rd’‘Huali 4th’selected from Hunan province were used as tested materials,the appearance quality indexes,the inner quality indexes and the content of six nutrients in the nuts of four C.henryi varieties were determined and compared.The results showed that fruit quality had some differences in different levels among four cultivars.Among them,the average nut weight of‘Huali 1st’(11.68 g)was significantly higher than that of other varieties,and it belonged to large fruit type.The contents of soluble sugar(10.08%),vitamin C(325.80μg·g^(-1)),Zn(5.34μg·g^(-1))and Cu(5.57μg·g^(-1))were also the highest,and other nutrients were higher.The average nut weighs of‘Huali 2nd’was 8.39 g and belonged to medium fruit type.The contents of K(0.39%),Ca(370.67μg·g^(-1))and Zn(5.34μg·g^(-1))were the highest,and the contents of soluble sugar,protein and Fe were higher.The average nut weight of‘Huali 3rd’was 8.85 g,which belonged to medium fruit type,the nut was shiny and beautiful,the content of starch(36.97%),Ca(366.67μg·g^(-1))and Fe(10.03μg·g^(-1))was the highest,and the content of soluble sugar,vitamin C and Cu were higher.The average nut weight of‘Huali 4th’were 8.29 g,which belonged to medium fruit type,the content of protein and fat was the highest,and the content of K,Zn and Cu were higher.
