有机荧光探针在粮油及其制品检测中的研究进展 被引量:1

摘要 粮油安全是重要的食品安全问题之一,在全球范围受到广泛关注。为应对从采收到消费全流程的风险因素,建立快速有效的安全检测方法极其重要。有机荧光探针无论作为独立的检测手段,还是与其他技术相结合,在快速检测中都发挥着重要作用。本文聚焦最近5年用于检测粮油及其制品风险因素(包括金属离子、阴离子、有机物、真菌毒素等)的有机荧光探针,对各探针的检测原理、灵敏度、响应时间、回收率等进行了综合描述和讨论,并比较了各探针的优缺点,最后对有机荧光探针在粮油及制品应用的发展进行了展望。期望本文能激发粮油安全检测新的研究思路和兴趣,促进理论研究向工业生产的转换。 The safety of cereals and oils and their products is an important food safety issue,which attracts widespread attention worldwide.To cope with the risk factors of cereals and oils and products during the entire stage of consumption,it is necessary to establish fast and effective detection methods.Organic fluorescent probes play an important role in rapid detection methods,either as an independent detection technology or in combination with other technologies.In the present paper,the application of organic fluorescent probes in recent 5 years was paid attention to for detecting cereals and oils and their products risk factors,including metal ions,anions,organics and mycotoxins,etc.The detection principle,sensitivity,response time and recovery rate,etc.of each probe were comprehensively described and discussed,and the advantages and limitations of each probe were also compared.Finally,the development of the application of organic fluorescent probes in cereals and oils and their products was prospected.It was hoped that the present paper can motivate new research ideas and interest in the safety testing of cereals,oils and their products,and promote the conversion of the laboratory research to industrial production.
