摘要
食用菌具有较高的营养价值和广阔的开发利用价值,介绍了食用菌的营养成分,阐述了其在罐制品、饮料、调味品、主食化食品、休闲食品等领域的开发现状,并展望了食用菌加工产品的发展方向。
Edible fungi had higher nutritional value,and had broad development and utilization value.This article reviewed edible fungi nutritional composition,explained the development status in canned products,drinks,condiments,staple foods,snack foods and so on,and prospected the development direction of edible fungi processing products.
