摘要
n-3多不饱和脂肪酸含量和比例与人类的营养和健康密切相关,羊肉是人体摄取n-3多不饱和脂肪酸的一个重要来源。同时,脂肪酸组成以及n-3多不饱和脂肪酸含量也是影响羊肉品质的一个关键因素。本文综述了羊肉中n-3多不饱和脂肪酸的来源及其在羊肉中的沉积规律,进一步阐释了羊肉中n-3多不饱和脂肪酸沉积的微生物及分子调控机制,为寻找提升羊肉中n-3多不饱和脂肪酸的沉积策略以及后续相关研究提供参考。
n-3 polyunsaturated fatty acids are critical for human nutrition and health. Lamb meat is an important source of n-3 polyunsaturated fatty acids for human being. At the same time, the fatty acid and n-3 polyunsaturated fatty acids composition are key factors in evaluating meat quality of lamb meat. This review discussed the source and depositing rule of n-3polyunsaturated fatty acid in lamb, and further explained the potential microbial and molecular regulation mechanism of the deposition of n-3 polyunsaturated fatty acid in lamb meat. This review provides references for finding strategies to increase the deposition of n-3 polyunsaturated fatty acids in lamb and also for subsequent research.
