摘要
对水产胶原的制备方法及其自组装性能的研究进展进行了综合性回顾,旨在为水产胶原的深入研究和应用提供参考。在水产胶原制备方面,重点综述水产胶原提取的预处理操作、酸法提取、酸/酶法提取和提取辅助方法的研究现状以及原料差异(如鱼种、生长环境、组织部位等)对胶原提取得率的影响;在水产胶原自组装性能方面,重点阐释水产胶原自组装性能的监测手段和调控研究现状。
In this review,the preparation methods and self-assembly properties of aquatic collagen were reviewed.In the preparation part of aquatic collagen,the progress of collagen extraction pretreatment,acid extraction,acid/enzyme extraction and the corresponding auxiliary extraction methods were reviewed,as well as the effects of different factors such as fish species,growth environments and tissue anatomical sites on collagen yield were discussed.In the self-assembly properties part of aquatic collagen,the methods and regulation of self-assembly of aquatic collagen were reviewed.
