Research Progress of Bioactive Polypeptides and Their Applications

多肽是蛋白质经酶解而成的大小不同的中间产物,比蛋白质具有更稳定的加工性质以及更易吸收的生理性质。其种类众多,是从动植物、微生物及其代谢产物中提取的分子量小的寡肽及分子量大的环形肽。本文概述了目前生物活性多肽的功能及其在食品、医药和美容行业中的应用情况,并对其研究发展的方向进行总结与展望,为生物活性多肽研究领域的深度开发利用提供参考。

Polypeptides are intermediate products of different sizes formed by enzymatic hydrolysis of proteins,which have more stable processing properties and more easily absorbed physiological properties than proteins.There are many kinds of peptides,which are small molecular weight oligopeptides and large molecular weight circular peptides extracted from animals,plants,microoganisms and their metabolites.In this paper,the function of bioactive peptides and its application in food,medicine and cosmetology industry were summarized and prospected,which can provide reference for the further development and utilization of biologically active peptides.
