辽宁水稻品种主要品质性状和RVA谱特征值研究 被引量:2

摘要 通过对27份辽宁典型水稻品种外观品质、营养品质和RVA谱特征值的测定,分析了外观品质性状和营养品质之间的关系、主要RVA谱特征值(消减值、崩解值、回复值)与外观品质和营养品质各项指标的相关关系。结果表明,外观品质与营养品质之间垩白粒率分别与垩白度、白度、蛋白质含量达到极显著正相关,食味值与垩白粒率、垩白度、蛋白质和直链淀粉呈极显著负相关关系,与回复值也呈极显著负相关,与崩解值呈极显著正相关,与消减值负相关但不显著,RVA谱特征值中崩解值与外观品质中的垩白粒率和白度分别呈显著和极显著负相关关系,起浆温度与外观品质的多项指标均呈显著关系。 Based on the determination of appearance quality,nutritional quality and RVA spectrum characteristic values of 27 typical rice varieties in Liaoning province,the relationship between appearance quality traits and nutritional quality,and the correlation between main RVA spectrum characteristic values(reduction value,disintegration value,recovery value)and appearance quality and nutritional quality indexes were analyzed.Results show that chalky rice rate of the appearance quality and nutrition quality had extremely significant positive correlation with chalkiness degree,protein content reached,and eating value were very significant negative correlation among chalky rice rate,chalkiness degree,protein and amylose,and the response value is significantly negative correlation,and the disintegration of value has significant positive correlation,and the cutting value negative correlation but not significant,The disintegration value of RVA spectrum was significantly and extremely significantly negatively correlated with the chalky grain percentage and chalky degree of appearance quality,respectively.The pulping temperature was significantly correlated with many indicators of appearance quality.
