摘要
红曲黄色素包括红曲素和红曲黄素,是红曲霉的次生代谢产物,是药食两用的中国特色的传统发酵产品。红曲黄色素具有众多的生理活性,如抗氧化、降脂降糖、抗肥胖、抗癌和改善老年痴呆等功能。与红曲红色素和红曲橙色素相比,红曲黄色素相对安全稳定。在适当的剂量下,红曲黄色素可作为功能因子添加在保健食品中。
Monascus yellow pigments were secondary metabolites of Monascus purpureus including monascin and akaflavin.They were traditional fermentation products with Chinese characteristics for both medicinal and food use.Monascus yellow pigments had many physiological activities,such as antioxidant,lipid-lowering,anti-obesity,anti-cancer,improving alzheimer’s disease.Compared with Monascus red pigments and Monascus orange pigments,Monascus yellow pigments were relatively safe and stable.So they could be used as functional factors in health food or medicine in the appropriate dose.
