摘要
通过评估杭州市旅游食品安全风险,构建旅游食品安全风险测评系统,依托生产基地的食安控制技术、食材供应基地和供应商选择评价与管控措施、加工过程安全控制技术及规范标准、配送链中低温冷链保鲜系统关键技术以及配送链的溯源查询系统等食安管控措施,形成了切实可行的旅游食品安全保障体系,对于提高杭州市旅游食品安全风险保障水平产生重要作用。
Tourism food safety risk of Hangzhou city was assessed for establishing the assessment system.A feasible tourism food safety guarantee system was constructed relying on the food-safety control technology of our food processing bases,selection index evaluation system of food material supply base and supplier,safety control technology and specification of food processing,key technology of cold-chain preservation system in food distribution chain,traceability query system of food distribution chain and other measures.It plays an important role in improving the tourism service quality of Hangzhou city.
