摘要
长江中下游地理气候环境和云贵地区差异显著,在酱酒生产上并不能完全参考传统,需要对部分环节进行调整。经数年摸索适配地域环境的酱酒工艺,采用对应的措施,突出酱香风味,并对工艺的改进作出总结。
The geographical and climatic environment in the middle and lower reaches of the Yangtze River is significantly different from that in Yunnan and Guizhou. The tradition can not be fully referred to in the production of Maotai-flavor liquor, and some links need to be adjusted. Our company has studied for several years, explored the sauce wine process suitable for the regional environment, adopted corresponding measures to highlight the Maotai-flavor, and summarized the improvement of the process.
