猪肉是人类饮食的重要组成部分,检测其新鲜度对保障人类健康具有重要意义。本研究基于猪肉新鲜度评定标准,根据肉类变质、腐败的理化检测pH值变化,研制出0.1%溴百里香酚蓝钠盐-0.1%溴甲酚紫钠盐可以作为有效指征猪肉新鲜度的混合指示剂,提出一种科学、简单、普适的指示剂法检测猪肉的新鲜度,具有较高的实际应用价值。

Pork is an important part of human diet, it is of great siginfiance to detect the freshness of pork to protect human health. Baesd on the evaluction standard of pork freshness, according to the physical and chemical properties of meat deterioration and spoilage to detect the change of pH value, We developed 0.1% bromothymol blue sodium salt-0.1% bromocresol violet sodium salt can be used as an effective mixed indicator to indicate pork freshness, and put forward a scientific, simple, universal indicator method to detect the freshness of pork. This study has a strong practical application value.
