摘要
采用全二维气相色谱-飞行时间质谱研究分析了‘洛阳红’和‘黄冠’牡丹的花香组分.结果表明:(1)共检测鉴定出186种化合物,包括醛39种、酮6种、醇42种、酸5种、酯18种、烷烃14种、烯烃34种、芳香烃9种和其他类物质19种.(2)含量较高的有醛、醇、酯、烷烃、烯烃类物质和其他类物质,是构成香气的主要组分,其中,‘黄冠’中醛、醇和烯烃类物质比‘洛阳红’高,因此具有更加浓郁和香甜的气味特征.(3)相比普通一维气质,全二维气相色谱-飞行时间质谱鉴定出了更多的香气组分,分析更为全面.(4)GC×GC-TOFMS具有峰容量大,灵敏度高的优点,用于牡丹花香气研究更具优势.该研究为建立牡丹花香气指纹图谱及研发牡丹香精香料提供了依据.
In this study,GC×GC-TOFMS was used to analyze the aroma of two peonies,Paeonia suffruticosa‘Luoyanghong’and‘Huangguan’.The results showed that:(1)A total of 186 compounds were detected and identified from the 2 species of peony petals,including 39 aldehydes,6 ketones,42 alcohols,5 acids,18 esters,14 alkanes,34olefins,9 aromatic hydrocarbons and 19 others.(2)Aldehydes,alcohols,esters,alkanes,olefins,and others were the major components of the volatile compounds in two species of peony petals.The contents of aldehydes,alcohols and alkene in‘Huangguan’are much higher than those in‘Luoyanghong’,making‘Huangguan’possess richer and more sweet smell.(3)Compared with ordinary gas chromatography-mass spectrometry analysis,GC×GC-TOFMS detected more aroma components of peony flowers.(4)With larger peak capacity and higher sensitivity of GC×GC-TOFMS,more information about peony aroma components was obtained.This study provides a basis for the establishment of peony aroma fingerprints and development of peony flavors and fragrances.
