摘要
本研究分别提取了人工流水养殖和仿生态养殖4育龄大鲵肌肉,测定其营养元素、氨基酸含量及矿物质含量。结果表明,仿生态养殖大鲵较人工流水饲养大鲵肌肉更具开发价值。仿生态养殖大鲵肌肉的平均粗蛋白含量比人工流水养殖大鲵高4.19%;仿生态养殖大鲵肌肉含有大量优质蛋白,EAA/TAA较人工流水养殖大鲵高11.39%,且矿物质含量丰富。
In this study,the muscles of 4-year-old giant salamander cultured in artificial running water and imitative ecological conditional were extracted,and the contents of nutritional elements,amino acids and minerals were measured.The results showed that the muscle nutrition of giant salamander cultured in imitative ecological conditional was more valuable than that in artificial running water.The average crude protein content in muscle of giant salamander cultured in imitative ecological conditional was 4.19%higher than that in artificial running water.The muscles of giant salamander cultured in imitative ecological conditional contained a large amount of high-quality protein,and the EAA/TAA was 11.39%higher than that in artificial running water,and the content of minerals was rich.
