油橄榄果渣的化学成分及功效研究进展 被引量:2

摘要 油橄榄在榨油过程中会生成大量副产物,即油橄榄果渣。油橄榄果渣具有抗氧化、抗艾滋病病毒、肾保护及降脂等功效。为此,结合国内外研究进展,对油橄榄果渣的基本成分进行总结,并在此基础上对其中山楂酸、橄榄多酚、齐墩果酸三种功效成分的性质及其有利作用进行介绍,旨在为拓展其在食品及其相关领域的应用提供理论依据。 During the extraction of olive,a large amount of olive pomace is produced.Olive pomace has antioxidant,anti-HIV,kidney protection,lipid-lowering and other effects.Therefore,this paper summarizes the basic components of olive pomace based on the research progress at home and abroad.On this basis,the properties and beneficial effects of the three functional components of maslinic acid,olive polyphenols and oleanolic acid were introduced.The purpose is to provide relevant theoretical basis for expanding its application in food and related fields.
