摘要
研究特医婴儿乳蛋白深度水解配方食品在开启包装后室温储存期间的产品稳定性。参照《特殊医学用途配方食品稳定性研究要求(2017修订试行版)》的相关要求与方法,研究其感官评价、营养成分、安全指标等的变化情况。结果表明:开罐存放期间,产品感官指标未发生明显变化;营养成分叶黄素和硒的稳定性会遭到破坏,产生不同程度衰减,其中叶黄素衰减程度最高,但所有营养素在样品开封使用1个月的过程中均符合标准要求;安全性指标基本无变化,产品品质稳定。在遵循包装标识“开封后必须保证密封,建议在1个月内用完”的原则下,特医配方食品开启包装后食用期间,产品品质稳定,可以确保婴幼儿摄入营养的安全性和充足性。试验结果可为特医配方食品的研发及应用提供参考。
The stability of infant milk protein hydrolyzed formula food at room temperature after opening package is studied.According to Research Requirements for Stability of Formula Food for Special Medical Purposes(2017 revised trial version),the changes of sensory evaluation, nutritional composition and safety indexes are studied. The results show that the sensory index of the product does not change significantly during storage. The stability of the nutrients lutein and selenium can be damaged and attenuated in different degrees, among which lutein attenuats the most, but all the nutrients meet the standard requirements in the course of one month of sample opening. The safety index basically does not change, and the product quality is stable. In accordance with the principle of “sealing must be ensured after opening, and it is recommended to use up within one month”, the product quality of special medical formula food after opening packaging is stable, which can ensure the safety and sufficiency of infant nutrition intake. The results provide some reference for the development and application of special medical formula food.
