摘要
对具有促进健康和加强功能性产品的研究成为热点。益生元是天然存在于一些动植物食品中的功能性成分,因其具有积极的健康作用而受到食品行业的广泛关注。益生元在促进肠道健康方面的益处众所周知,在干酪产品中加入益生元可提高产品的热稳定性、感官、质地和功能性品质。综述益生元的功效作用,以及对干酪品质特性影响的研究现状与展望,以期为益生元在乳制品中的研究与生产应用奠定基础。
Research on products with health-promoting and enhancing functions has become a hot topic. Prebiotics are functional ingredients naturally present in some animal and plant foods, and have received extensive attention in the food industry due to their positive health effects. The benefits of prebiotics in promoting gut health are well known, and the addition of prebiotics to cheese products can improve the thermostability, sensory, texture and functional qualities of the product.Review the efficacy of prebiotics and the research status and prospects of their effects on cheese quality characteristics, in order to lay a foundation for the research, production and application of prebiotics in dairy products.
