贺兰山东麓产区不同地块酿酒葡萄果实类黄酮物质分析

Effects of Different Parcels on Flavonoids Composition of Wine Grapes in Eastern Foot of Helan Mountain

类黄酮物质是酿酒葡萄果实中一类重要的次生代谢产物,对葡萄酒的感官品质有着重要影响。本研究以宁夏贺兰山东麓产区4个地块的‘霞多丽’和‘赤霞珠’葡萄成熟期果实为样本,使用高效液相色谱-质谱联用技术分析果皮及种子中类黄酮物质的组成。结果表明,不同地块之间两个品种葡萄果实的类黄酮物质均存在显著差异,志辉和高家闸地块‘霞多丽’葡萄果实中的特征性化合物以果皮原花色素(+)-儿茶素末端单元、种子游离(-)-表儿茶素没食子酸酯等黄烷醇类物质和槲皮素-3-O-芸香糖苷等黄酮醇类物质为主。志辉、华西和金山地块‘赤霞珠’葡萄果实中特征性类黄酮化合物以黄酮醇类和果皮游离(+)-儿茶素、种子游离(-)-表儿茶素等黄烷醇类以及花青素-3-O-葡萄糖苷等花色苷类为主。试验可为该产区葡萄酒特征风格的塑造和小产区的划分提供一定的参考依据。

Flavonoids are one class of important secondary metabolites in wine grape fruits,which have crucial impacts on wine sensory qualities.In this study,mature grape fruits of'Chardonnay'and'Cabernet Sauvignon'from four parcels in eastern foot of Helan Mountain were collected as samples,and High Performance Liquid Chromatography-Mass Spectrometry(HPLC-MS)was used to analysis the composition of flavonoids in peels and seeds.The results showed that there were significant differences in flavonoids in both of two varieties fruits among different parcels.The characteristic flavonoids in'Chardonnay'fruits between Zhihui and Gaojiazha parcels mainly reflected in the content of flavanols like the(+)-catechin terminal subunit of proanthocyanidins in peels,free(-)-epicatechin-3-gallate in seeds and flavonols like quercetin-3-O-rutinoside.The characteristic flavonoids in fruits of'Cabernet Sauvignon'grapes fruits among Zhihui,Huaxi and Jinshan parcels mainly included flavonols and flavanols such as free(+)-catechin in peels,free(-)-epicatechin in seeds and anthocyanins such as cyanidin-3-O-glucoside.This could provide a certain reference for the shaping of characteristic wine styles and the division of small wine regions in eastern foot of Helan Mountain.
