摘要
在葡萄酒实际生产中,添加外源糖的现象时有发生。为明确糖的来源,基于稳定同位素的联用技术在外源糖鉴定中发挥了重要作用。基于国内外文献,本文综述了稳定同位素技术在葡萄酒掺糖鉴别中的研究进展,比较了不同稳定同位素技术在葡萄酒掺糖鉴别中的优缺点,重点阐述了碳(C)、氢(H)稳定同位素在葡萄酒掺糖鉴别中的应用,旨在为我国葡萄酒掺糖鉴别的深入研究启迪思路,促进葡萄酒产业的健康发展。
The phenomenon of adding exogenous sugar often occurs in actual production of wine.In order to identify the source of sugar,the stable isotope combination technology plays an important role in the identification of exogenous sugar.Based on the research literature at home and abroad,stable isotope technique were reviewed the research progress in wine with sugar to identify,compared the different stable isotope technique in wine with sugar to identify the strengths and weaknesses,expounded carbon(C)and hydrogen(H)application of stable isotope in wine with sugar to identify,the aim was to enlighten the deep research on the identification of wine adulterated with sugar in China and promote the healthy development of wine industry.
