酶解鸡蛋粉对肾血管性高血压(RVH)大鼠降压效果研究

摘要 [目的]利用胰酶将鸡蛋进行酶解,酶解产物进行产品工艺优化,考察降压功效,得到状态良好且功效显著的产品。通过考察单次给药(24 h)及长期给药(21 d)降压趋势来选择一个适当的血压监测时间点,减少对血压值测定准确性的潜在影响,并考察蛋黄脱脂与蛋清灭活工艺对体内降压的影响。[方法]对水解物及优化后产品进行风味、流动性及溶解性等项目考察。对肾血管性高血压(RVH)大鼠给予全蛋酶解冻干粉(E-H)、脱脂蛋黄与灭活蛋清混合酶解冻干粉(DEY-IEW-H)2种药物,考察单次给药24 h内以及连续给药21 d各组血压变化趋势,以及通过连续给药21 d试验结果,分析蛋黄脱脂与蛋清灭活对降压功效的影响。[结果]DEY-IEW-H的溶解性、流动性改善明显,综合评价最佳。给药后24 h内,大鼠血压先下降再回升至起点,在6 h下降程度最为显著。在单次给药24 h内及连续给药21 d期间,DEY-IEW-H组血压始终低于E-H组,且系统给药21 d内,未脱脂蛋黄与灭活蛋清混合酶解冻干粉(EY-IEW-H)组与E-H组降压趋势及程度无差异,但均无DEY-IEW-H组降压显著。[结论]DEY-IEW-H的降压效果及产品状态最佳。 [Objective]To use trypsin to hydrolyze eggs,optimize the product process and investigate the antihypertensive effect.[Method]The flavor,fluidity and solubility of the hydrolysate and the optimized product were investigated,and the RVH rats were given two kinds of drugs:E-H and DEY-IEW-H the change of blood pressure in each group within 24 hours after single administration and 21 days after continuous administration was investigated,the effect of egg yolk degreasing and egg white inactivation on antihypertensive efficacy was analyzed through the experimental results of 3 weeks of continuous administration.[Result]The solubility and fluidity of DEY-IEW-H were improved obviously,and the comprehensive evaluation was the best.Within 24 hours after administration,the blood pressure of rats first decreased and then rose to the starting point,the most significant decrease was at the 6th hour.During 24 hours of administration and 3 weeks of continuous administration,blood pressure was consistently lower in DEY-IEW-H group than in E-H group.There was no significant difference in the degree of hypotension between EY-IEW-H group and E-H group within 3 weeks,but there was no significant hypotension in E-H group.[Conclusion]DEY-IEW-H has the best antihypertensive effect and product status.
