摘要
本试验以玉米须、苹果为原料,研究了玉米须苹果复合保健饮料的制备工艺,并以感官评分为指标,采用单因素试验和正交试验对玉米须苹果复合保健饮料的配方进行设计与优化。结果表明:最佳配方为玉米须与苹果提取液的质量添加比例为4∶8,黄原胶添加量为0.04%、木糖醇添加量为6%、柠檬酸添加量为0.03%。在此条件下,制得的复合保健饮料清香可口、酸甜适宜、风味协调、颜色均一有光泽。
In this experiment,corn silk and apple were used as raw materials to study the preparation technology of corn silk and apple composite health drink,and single factor experiment and orthogonal experiment were used to design and optimize the formula of corn silk and apple composite health drink with sensory score as the index.The results showed that the optimum formula was that the mass addition ratio of corn silk and apple extract was 4∶8,xanthan gum was 0.04%,xylitol was 6%,citric acid was 0.03%.Under this condition,the compound health drink produced had the advantages of delicious fragrance,sweet and sour taste,harmonious flavor,uniform color and luster.
