摘要
畜禽屠宰与肉类加工技术标准是屠宰加工和肉类生产加工的技术依据。近年来,中国发布实施了一系列畜禽屠宰与肉类加工技术的国家标准,有效地规范了畜禽屠宰与肉类加工的行为。从标准制(修)订背景、实施意义、主要技术内容等方面,分别对2022年实施和2023年即将实施的GB/T 40464-2021《冷却肉加工技术要求》、GB/T 29392-2022《畜禽肉质量分级牛肉》、GB/T 40466-2021《畜禽肉分割技术规程猪肉》、GB/T 17238-2022《鲜、冻分割牛肉》和GB/T 40467-2021《畜禽肉品质检测近红外法通则》等5项重要标准进行了详细剖析与解读,旨在畜禽屠宰与肉类加工企业和技术管理人员精准把握并有效运用。
Livestock and poultry slaughtering and meat processing technology standards were the technical basis for slaughtering and meat production and processing.In recent years,China had issued and implemented a series of national standards for livestock and poultry slaughtering and meat processing technology,and the behavior of livestock and poultry slaughtering and meat processing was effectively regulated.From the aspects of standard system(revision)background,implementation significance and main technical content,five important standards,including GB/T 40464-2021“Technical Requirements for Chilled Meat Processing”,GB/T 29392-2022“Livestock and Poultry Quality Grading-Beef”,GB/T 40466-2021“Technical Specification for Livestock and Poultry Meat Segmentation-Pork”,GB/T 17238-2022“Fresh and Frozen Segmented Beef”,and GB/T 40467-2021“General Rules for Near Infrared Detection of Livestock and Poultry Meat Quality”,wereanalyzed and interpreted in detail,and they would be implemented in 2022 and 2023.The aim was to accurately grasp and effective useby livestock and poultry slaughtering and meat processing enterprises and technical management managers.
