穇子膳食纤维的提取工艺研究 被引量:3

摘要 以保加利亚乳杆菌和嗜热链球菌为发酵剂,采用乳酸菌发酵法提取穇子中的膳食纤维。以可溶性膳食纤维(SDF)提取率为指标,采用单因素试验和响应面试验设计优化提取工艺,并探讨了穇子膳食纤维持水力、膨胀力、吸油力等性能特征。最终确定最优工艺条件:接种量3%,发酵时间24 h,料液比1∶10(g/mL)。在该工艺条件下,穇子SDF平均提取率为18.58%,持水力为7.14 g/g,膨胀力为7.53 mL/g,吸油力为1.67 g/g。 Lactobacillus bulgaricus and Streptococcus thermophilus were used as starters to extract dietary fiber from Eleusine coracana(L.)Gaertn by lactic acid bacteria fermentation method.Taking the soluble dietary fiber(SDF)extraction rate as the index,a single factor test and response surface test were used to optimize the extraction process,and the performance characteristics of dietary fiber such as water holding capacity,swelling capacity and oil absorption capacity were discussed.Finally,the optimal process conditions were determined as follows:inoculation amount 3%,fermentation time 24 h,and material-to-liquid ratio 1∶10(g/mL).Under these conditions,the average extraction rate of SDF of Eleusine coracana(L.)Gaertn was 18.58%,the water holding capacity was 7.14 g/g,the expansion force was 7.53 mL/g,and the oil absorption was 1.67 g/g.
