荆芥精油的化学成分及对葵花籽油氧化稳定性的影响 被引量:1

摘要 采用水蒸气蒸馏的方式提取荆芥精油,通过气相色谱-质谱联用技术(GC-MS)鉴定其主要挥发性成分,并以葵花籽油的酸价、过氧化值、茴香胺值以及极性组分为指标,探究荆芥精油对葵花籽油的抗氧化能力。结果表明:荆芥精油的主要挥发性成分为长叶薄荷酮(492.4±18.7)mg/g、薄荷酮(434.3±21.1)mg/g、柠檬烯(33.2±2.5)mg/g以及β-石竹烯(20.2±3.2)mg/g;荆芥精油对葵花籽油的抗氧化作用明显,且存在剂量效应,当荆芥精油的添加量达800 mg/kg时,对葵花籽油的抗氧化作用接近于200 mg/kg TBHQ的效果。因此,荆芥精油可以作为天然抗氧化剂应用于葵花籽油。 The essential oil from Nepeta cataria(NCEO)was extracted by steam distillation,and the chemical composition was identified by gas chromatograph-mass spectrometer(GC-MS).Taking acid value,peroxide value,anisidine value,and polar component as indexes,the antioxidant ability of NCEO in sunflower seed oil was investigated.The results showed that the major compositions in volatile components were pulegone(492.4±18.7)mg/g,menthone(434.3±21.1)mg/g,limonene(33.2±2.5)mg/g,andβ-caryophyllene(20.2±3.2)mg/g.Moreover,the antioxidant activity of NCEO on sunflower seed oil was investigated.It was found that the NCEO had strong antioxidant activity which acted with dose effect.The antioxidant effect of NCEO at 800 mg/kg on sunflower seed oil was equivalent to TBHQ at 200 mg/kg.Consequently,NCEO could be employed as potential natural antioxidant for sunflower oil.
