品种和块根大小对春季迷你甘薯食味的影响 被引量:1

Effect of varieties and storage root sizes on the taste quality of mini-type sweetpotato in spring

摘要 对国内鲜食甘薯广泛生产应用的心香、普薯32、烟薯25和龙薯9号4个品种进行春季迷你甘薯食味、干率、蒸熟前后可溶性糖含量、粗纤维含量测定,分析不同品种和块根大小对迷你甘薯食味的影响.结果表明,心香和普薯32干率高,食味优,块根蒸熟后可溶性糖含量高,粗纤维含量少;烟薯25干率中等,食味中上,块根蒸熟后糖化中等,粗纤维含量较多;龙薯9号干率低,食味中上,块根果糖和葡萄糖含量高,粗纤维含量少.同一品种中,不同大小块根的食味差异不明显,心香、普薯32、烟薯25的熟薯还原糖和可溶性糖含量块根大的比小的高,而龙薯9号的熟薯还原糖和可溶性糖含量随着块根增大呈下降趋势.心香迷你甘薯香味浓郁,熟薯还原糖含量高,50~100 g块根的食味明显优于同等大小的普薯32.心香、普薯32、龙薯9号适宜作春季迷你甘薯品种,烟薯25适宜作普通鲜食品种. The taste,dry matter content,soluble sugar content before and after steaming,and crude fiber content of mini-type sweetpotato in spring were measured using 4 widely spread varieties(Xinxiang,Pushu 32,Yanshu 25 and Longshu No.9)in China,and the effects of different varieties and storage root sizes on the taste quality of mini-type sweetpotatoes in spring were analyzed.The results showed that Xinxiang and Pushu 32 had high dry matter content,the best taste,high soluble sugar content after steaming and low crude fiber content.Yanshu 25 had medium dry matter content,better taste,medium saccharification after steaming,and higher crude fiber content,while Longshu No.9 had low dry matter content,better taste,high contents of fructose and glucose,and low crude fiber content.There was no significant difference in taste among different storage root sizes of the same variety.The contents of reducing sugar and soluble sugar after steaming in the big storage root were higher than those in the small storage root of Xinxiang,Pusu32 and Yansu25,however,this change trend in Longshu No.9 was just the reverse.Mini-type sweetpotato of Xinxiang possessed strong aroma and high reducing sugar content after steaming,and the taste of storage root size with 50~100 g was obviously better than that of Pushu 32 with the same size.Xinxiang,Pushu 32 and Longshu No.9 are suitable for spring mini-type sweetpotato varieties,while Yanshu 25 is suitable for general food variety.
