摘要
冰箱行业近几年开发了越来越多的可独立控温,实现相关食材特定保鲜效果的技术。果蔬存储方面,不同种类的果蔬适宜存储温度也往往并不相同,而目前却仍无果蔬适温存储的产品。本文通过研究非低温敏感型、低温敏感型水果在不同温度下的保鲜效果及口感等,验证得出了非低温敏感型水果在冰箱环境以接近0℃温度存储,低温敏感型水果在冰箱环境以略高于冷害温度临界点,品质可有效提升的结论;通过对未成熟水果在变温温度程序下与冷藏、室温的对比,验证得出了未成熟水果在变温温度程序下成熟速度加快,口感提升的结论。
In recent years,the refrigerator industry has developed more and more technologies that can independently control the temperature and achieve the specific fresh-keeping effect of related ingredients.In terms of fruit and vegetable storage,the suitable storage temperature for different types of fruits and vegetables is often different,but there is still no suitable temperature storage product for fruits and vegetables.In this paper,by studying the preservation effect and taste of non-low temperature-sensitive and low-temperature-sensitive fruits at different temperatures,it is verified that non-low-temperature-sensitive fruits are stored at a temperature close to 0℃in a refrigerator environment,and low-temperature-sensitive fruits are stored in a refrigerator environment at a temperature close to 0℃.Slightly higher than the critical point of chilling injury temperature,the quality can be effectively improved;through the comparison of immature fruits under the variable temperature temperature program with refrigeration and room temperature,it is verified that the ripening speed of immature fruits is accelerated under the variable temperature temperature program,and the taste is improved conclusion.
