摘要
通过对瘦肉型三元杂交猪、天露黑猪、小耳花猪、粤东黑猪、藏猪肌内脂肪测定并进行人工评分,探究地方猪种与瘦肉型猪种肌内脂肪和大理石纹评分之间的关联性。测定了80头瘦肉型三元杂交猪、48头天露黑猪,8头小耳花猪、8头粤东黑猪、8头藏猪的胴体重、眼肌面积和肌内脂肪,同时使用美国NPPC标准比色卡进行人工评分,使用生物信息学方法探究其关联性。结果表明,天露黑猪肌纤维较细,肌细胞之间缝隙较大,瘦肉型猪的肌纤维由多个肌细胞紧密连接形成,肌纤维较粗,肌细胞之间缝隙很小。大理石纹评分方法适用于对瘦肉型猪肌内脂肪含量的简易快速评价,但不适合对所有地方猪品种肌内脂肪含量的评价。
By measuring and manually scoring the intramuscular fat of lean ternary hybrid pigs,Tianlu black pigs,Xiaoerhua pigs,Yuedong Black pigs,and Tibetan pigs,the intramuscular fat of local pig breeds and lean pig breeds was explored. and marbling scores. 80 lean-meat ternary hybrid pigs,48 Tianlu black pigs,Xiaoerhua pigs,Yuedong black pigs,and Tibetan pigs(8 pigs each)were used as test materials for the determination of carcass body weight,eye muscle area and intramuscular fat. Manual scoring was performed using the American NPPC standard colorimetric card,and after taking the average,bioinformatics methods were used to explore its correlation. This experimental study found that the intramuscular fat distribution of lean pigs is more uniform,the fat cells of local pig breeds are evenly distributed among the muscle fibers,the muscle fiber gap of lean pigs is small,and the distribution of fat cells in the muscle is relatively concentrated. The marbling scoring method is suitable for the simple and rapid evaluation of the intramuscular fat content of lean pigs,but it is not suitable for the evaluation criteria of the intramuscular fat content of all local pig breeds.
