体外抗氧化活性评价方法的反应机理研究进展 被引量:15

摘要 活性氧等自由基会引发各种疾病,因此清除自由基或抑制自由基的产生,即抗氧化研究尤为重要。体外抗氧化实验是评价抗氧化活性的重要手段,对抗氧化剂的筛选和开发具有指导意义。根据反应机理对各种体外抗氧化活性评价方法进行了分类,并对常用的评价方法(化学分析法、细胞抗氧化活性法)的反应机理研究进展进行了综述,并提出多种评价方法的联用有助于更准确地评价抗氧化活性。 Free radicals such as reactive oxygen species can cause various diseases,so it is particularly important to scavenge free radicals or inhibit the generation of free radicals,that is,to perform antioxidant research.In vitro antioxidant experiment is an important means to evaluate the antioxidant activity,which has guiding significance for the screening and development of antioxidants.In this paper,we classify various evaluation methods for antioxidant activity in vitro according to the reaction mechanism,and review the research progress in reaction mechanism of common evaluation methods(chemical analysis method and cellular antioxidant activity method).Moreover,we put forward the combination of multiple evaluation methods which can help to evaluate antioxidant activity more accurately.
