摘要
N-亚硝胺类化合物是常见于食品中的致癌性化学污染物,其对膳食安全的风险与人体健康的危害备受关注。本文综述了国内外有关食品中常见N-亚硝胺类化合物的来源、种类、危害、检测方法、膳食暴露风险评估及控制措施的研究现状,期望为降低食品安全风险、保护人群健康提供参考。
N-nitrosamines are common carcinogenic chemical pollutants in food,and their risk to dietary safety and human health has attracted much attention.In this paper,the sources,types,hazards,detection methods,dietary exposure risk assessment and control measures of common N-nitrosamines in food at home and abroad were reviewed,in order to provide a reference for reducing food safety risks and protecting the health of the population.
