摘要
食品腐败变质大部分是由微生物的活动引起的。食品防腐剂通过抑制微生物的生长和繁殖,保证食品在一定时间内不会腐败变质。综述引起食品腐败变质的常见微生物及常见食品防腐剂的研究现状,并对防腐剂的发展提出建议。
Food spoilage is mostly caused by microbial activity.Food preservatives prevent food from spoiling in a certain period of time by inhibiting the growth and reproduction of microorganisms.The research status of common microorganisms causing food spoilage and common food preservatives are reviewed,and the development of preservatives is proposed.
