中国酿造酒及蒸馏酒起源分析研究

Origin of Chinese Fermented Wines and Distilled Spirits

中国酒以及中国蒸馏酒的起源一直以来都是学术界争论的问题,本文总结了前人的一些观点,包括针对中国酿酒起源的探讨、中国蒸馏酒起源的探讨以及蒸馏器的发展演变。本文认为中国酒的起源大约在新石器时代初期,河南省贾湖遗址以及上山文化桥头遗址的发现有力的证明了这一点;中国蒸馏酒在汉代的时候可能就出现了,发展于唐宋,到了元代有了一定规模,汉代多个蒸馏器的发现是有力的佐证。

The origin of Chinese alcoholic drinks has always been a hotspot of academic debate.This paper summarizes some of the views of the predecessors,including the discussion of the origin of Chinese fermented wines,the discussion of the origin of Chinese distilled spirits,and the development and evolution of distillers.This paper proposes that the origin of Chinese fermented wines dates back to the beginning of the Neolithic Age,which is proved by the discovery of the Jiahu site in Henan Province and the Shangshan Culture Qiaotou site.Chinese distilled spirits may have appeared in the Han Dynasty,developed in the Tang and Song Dynasties,and reached a certain scale in the Yuan Dynasty.
