摘要 在我国市场经济迅速发展的当下,人们生活水平持续提升,其食品安全意识也随之提升。动物源性食品是人们蛋白质的重要来源,但其中往往存在一些抗生素残留,为了有效保障人们的食品安全,为群众提供优质健康的动物源性食品,必须要强化动物源性食品的抗生素残留检测,杜绝动物源性食品中抗生素残留造成的不良影响。本文对动物源食品的抗生素残留危害及其类型进行概述,介绍了几种检测方法,并提出残留控制策略,以供参考。 With the rapid development of China’s market economy,people’s living standards continue to improve,and their food safety awareness also increases.Animal derived food is an important source of protein for people,but there are often some antibiotic residues in it.In order to effectively protect people’s food safety and provide high-quality and healthy animal derived food for the masses,we must strengthen the detection of antibiotic residues in animal derived food to avoid the adverse effects caused by antibiotic residues in animal derived food.In this paper,the harm and types of antibiotic residues in animal origin food were summarized,several detection methods were introduced,and residue control strategies were proposed for reference.
