饲用乳化剂对肉鹅生产性能、肉品质和血清生化指标的影响

摘要 试验旨在探究在饲粮中添加乳化剂对肉鹅生产性能、肉品质和血清生化指标的影响。选取192只体重1 kg左右的32日龄肉鹅(三花鹅),随机分成2组,对照组饲喂基础饲粮,乳化剂组在基础饲粮中添加0.2%乳化剂(改性磷脂>20%、溶血卵磷脂<1%)。每组12个重复,每个重复8只(公鹅),分栏饲养,试验周期为60 d。分别测定肉鹅65日龄时生长性能和92日龄时生产性能、肉品质和血清生化指标。结果表明:与对照组相比,饲粮中添加乳化剂对平均日增重无显著影响,可降低32~92日龄肉鹅的平均日采食量(P<0.05),耗料增重比呈降低趋势(P>0.05);乳化剂对肉鹅的屠宰性能无显著性影响,可降低腹脂率(P<0.05);乳化剂对肉鹅的肉色、肉质构特性、血清生化指标无显著影响,肉的硬度、血清总胆固醇及甘油三酯呈降低趋势(P>0.05)。可见,饲粮中添加乳化剂可以显著降低肉鹅的采食量和腹脂率,在一定程度上提高肉鹅的生长性能,改善鹅肉品质,降低总胆固醇和甘油三酯的含量。 This experiment was conducted to investigate the effects of dietary emulsifier on performance, meat quality and serum biochemical indices of meat geese. A total of 192 32-day-old geese(Sanhua geese) with an average body weight of 1 kg were randomly divided into two groups. Geese in the control group were fed a basal diet, and geese in the emulsifier group were fed the basal diet supplemented with 0.2% emulsifier(modified phospholipid >20% and lysophosphatidylcholine <1%). There were 12 replicates in each group and 8 ganders in each replicate, and the experiment lasted for 60 days. The performance, meat quality and serum biochemical indices of geese were measured at 65 days of age and 92 days of age,respectively. The results showed as follows: compared with the control group, dietary emulsifier had no significant effect on average daily gain, but decreased average daily feed intake of geese aged 32 to 92 days(P<0.05), and the ratio of feed consumption to gain(P>0.05);The emulsifier had no significant effect on slaughter performance of geese, but decreased abdominal fat percentage(P<0.05). Emulsifier had no significant effects on meat color, meat texture and serum biochemical indices, but meat hardness, serum total cholesterol and triglyceride showed a decreasing trend(P>0.05). In conclusion, dietary emulsifier can significantly reduce feed intake and abdominal fat percentage of meat geese, improve growth performance,improve meat quality, and reduce the contents of total cholesterol and triglyceride of meat geese to a certain extent.
