谷胱甘肽的生物学功能及其在养猪生产中的应用研究进展

Advance in Biological Function of Glutathione and Its Application in Pig Production

谷胱甘肽存在于所有哺乳动物组织中,由半胱氨酸、谷氨酸和甘氨酸缩合而成,具有抗氧化、解毒、调节细胞增殖与凋亡、调节细胞信号传导、参与γ-谷氨酰基循环等多种生物学功能,已被应用于食品、医药、保健品、化妆品等许多领域。谷胱甘肽对种猪的精液保存和卵泡发育、仔猪生长发育以及猪肉品质等方面具有一定调节作用。本文综述了谷胱甘肽的生产方法、生理功能以及在种猪繁殖性能、仔猪和育肥猪生产性能上的应用研究进展,旨在为谷胱甘肽在养猪生产中合理应用提供理论依据和实际参考。

Glutathione exists in all mammalian tissues and is combined from cysteine, glutamic acid and glycine. It has many biological functions, such as antioxidation, detoxification, regulation of cell proliferation and apoptosis, regulation of cell signal transduction, participation in γ-glutamyl cycle and so on. At present, it is used in many fields, such as food, medicine,health products and cosmetics. In the production and application of pigs, it can regulate the semen preservation and follicular development of breeding pigs, the growth and development of piglets and the quality of pork. In order to provide an effective theoretical basis for pig production and application, in this paper, the production methods, physiological functions and applications of glutathione in breeding pigs, piglet and fattening pigs were reviewed.
