江西省主要葡萄产区夏黑葡萄品质分析

Quality Analysis of Summer Black Grapes in the Main Grape Producing Areas of Jiangxi Province

为了解江西不同产地夏黑葡萄种植情况,并为筛选适宜栽培夏黑葡萄且获得综合表现良好的产地提供参考依据。本试验选取了江西省5个产区的15种夏黑葡萄样品为材料,通过测定其纵横径、可溶性固形物、糖酸比、果皮硬度、口感等指标进行综合分析。结果:江西不同地区15个夏黑果实品质指标表现为果实纵径为21.51~27.23 mm,横径为20.67~26.67 mm,果形指数在0.97~1.11,L值为24.01~30.36,a值为3.42~9.05,b值为-0.31~2.02,可溶固形物含量在15%~21%,糖酸比为68%~94%,硬度在14.21~41.20 N,脆度在14.13~39.43 N。结论:从鲜食品质和外观品质2个方面综合分析,15种样品的综合评价:XY2>JA6>JA1>NC1>JA3>XY3>NC4>JA5>XY1>JA2>JJ>FZ>NC2>JA4>NC3。吉安、新余、抚州等江西省的5市中,新余市栽培的夏黑品种的综合品质较优。

To understand the planting of summer black grapes in different production areas of Jiangxi,and to provide a reference basis for screening suitable summer black grapes for cultivation and obtaining good comprehensive performance.In this experiment,15 kinds of summer black grape samples from five appellations in Jiangxi province were selected as materials,and their vertical and horizontal diameter,soluble solids,sugar-acid ratio,peel hardness,taste and other indicators were comprehensively analyzed.Result:The quality indexes of 15 summer black fruits in different regions of Jiangxi showed that the longitudinal diameter of the fruit was 21.51~27.23 mm,the transverse diameter was 20.67~26.67 mm,the fruit shape index was 0.97~1.11,the L value was 24.01~30.36,the a-value was 3.42~9.05,the b-value was between -0.31~2.02,the soluble solid content was 15%~21%,and the sugar-acid ratio was 68%~94%.The hardness is 14.21~41.20 N,and the brittleness is 14.13~39.43 N.Conclusion:Comprehensive analysis of fresh food quality and appearance quality,the comprehensive evaluation of 15 samples:XY2>JA6>JA1>NC1>XY3>NC4>JA5>XY1>JA2>JJ>FZ>NC2>JA4>NC3.Among the five cities in Jiangxi province,such as Ji’an,Xinyu and Fuzhou,the summer black varieties cultivated in Xinyu have better comprehensive quality.
